English Breakfast

Strange to say, English Breakfast has nothing to do with either England or breakfast. Instead, it captures my impressions of Japan: the fish markets before dawn; the gardens of Kyoto; the Shinkansen early in the morning, everybody eating fresh sushi or sashimi; the food so fresh and outstanding; the breeze near the sea, everything so clean. Bravo, I loved it. And the name? That came when I was writing down the formula, in Normandy, while enjoying an English breakfast!! - Mark Buxton
